So ask them. Ask them to fill out a brief survey, or offer them a coupon for weighing in on your Facebook page. Take the opportunity to pick their brains about what they are looking for in gluten-free menu options, and go so far as to get their contact information. You might want to talk to them later, or even use them as taste testers when you are in the recipe development stage.
